Mother's Day Brunch

Today was such a fun day! This morning I hosted an intimate brunch in my home, well apartment, for Mother’s Day. I invited my mother and my mother in law and it was exactly what I needed.
We chatted, we laughed, and occupied Eleanor and Evelyn who were also in attendance at brunch.
Let’s talk about the food! So if you know me or have been following for awhile then you know that I’m obsessed with tea. I go out for Afternoon tea almost every weekend and have all the goodies in my home for the perfect DIY tea party. I can’t think of a better way to relax than with a warm cup of tea. At today’s brunch I served this pomegranate citrus green tea which was the perfect late morning pick me up. We also had these cherry & honey scones that I tried for the first time today and fell in love with. I made three different types of tea sandwiches; egg salad, avocado and turkey.

I wanted to add something a bit more substantial that our tea spread so I made a quiche for the first time. I followed this recipe and instead of ham I used a bunch of fresh spinach and it still tasted great. I also made the quiche the night before and just popped it in the oven at 200 for about 40 minutes prior to the brunch to warm it up. It still tastes great but I definitely wished I warmed it up just a bit more. I added a fresh Caesar salad and called it a day!
